Why is Beluga so expensive?

  • Very slow maturity: the Beluga sturgeon (Huso huso) produces roe only after 15 to 20 years, versus 6 to 8 years for Baeri.
  • The largest pearls: large, light to dark grey, with a very delicate texture.
  • Rare production: few farms, small volumes and strong demand.
  • Strict control: like all sturgeon, Beluga is protected by CITES and every tin carries an origin code.

How to recognise real Beluga

On the CITES label, the species code for Beluga is HUS (Huso huso). A “Beluga” sold far below these prices is almost always another species or a hybrid. All the checks: how to tell if caviar is real. Unsure between Kaluga and Beluga? See Kaluga vs Beluga.

Which size to choose?

  • 30 g: a tasting for one or two, or a gift.
  • 50 to 125 g: a festive dinner for 2 to 4 people.
  • 250 g to 1 kg: a large reception; the lowest price per gram.
